Called by many “golden dust that smells like the sea”, this bottarga is known even from the ancient times as a delicacy, considered as a precious trade good and a noble present. In this format is perfect to be eaten in thin slices and seasoned with extra virgin olive oil and a few drops of lemon; or au naturel together with some grapes.
