All over Italy they are called “Sardinian Gnocchetti”. In Sardinia they are called Is Malloreddus. Durum wheat flour and water, enriched with saffron to create this typical Sardinian pasta.
In the Sardinian language Malloru means bull, Malloreddus is its diminutive, and it translates to calves. An ancient name that associates the shape of this typical Sardinian pasta to the rounded shape of the calves. From durum wheat flour and water, bronze drawn and strictly left to slowly desiccate at low temperatures, in order to not compromise the organoleptic proprieties of the raw materials, a perfumed and tasty pasta that perfectly adapts to every type of sauces.
