Semolina pasta from durum wheat harvested in Sardinia, stone-ground. Cold kneaded and drawn to bronze. This smaller sized pasta hugs the sauce better, it collects it and surround it. Because of its unique porosity it has to be cooked al dente and swiftly drained.

Araj, a Sardinian name for a pasta factory that is indissoluble tied to Sardinia. Fresh wind: this is the meaning of the company’s name, and this is what they wanted to convey with their products. The semolina is obtained from a cold milled process in order to maintain the product's organoleptic qualities and above of all the wheat germ intact. The process of making this pasta is artisanal, bronze-drawn and a slow drying with low temperatures. By using this technique, the company avoids the three times cooking process of the pasta, and one may notice it by the characteristic pale-yellow colour and by looking at its silhouette it is possible to see the durum wheat semolina grains.
