Chimbanta Monica Igp 15% 75cl Tenute Dettori
From Monica grapes in purity cultivated in Sennori and harvested by hand, it comes this special wine that has a sentimental value for the Dettori company.
Red wine with Romangia Typical Geographical Indication. The 18th of September 2002 have been vinified the Monica grapes from which came this wine, in the Sardinian language “Chimbanta” means fifty, and this date is not trivial, in fact, it indicates day of the fiftieth birthday of Paolo Dettori, to whom it has been dedicated this wine. In the glass it has a ruby red colour with neat density and intensity; to the nose it is an engaging liquid tale of the Sardinian Island and it explodes in notes of myrtle, Mediterranean shrub, mature fruits and juniper. In its finale it opens to the taste of the sea, with its iodine and brackish recalls. Its sip is full and generous, in virtue of a matter that denotes a natural and non-overly researched richness. It tickles the palate without gloating and it stretches on a trail of refined sapidity, with a very long persistence, also found in its memory. Ideal to accompany structured first and second courses, both of the Sardinian tradition and not, savoury meat and vegetable dishes and semi-mature and mature cheeses.
