Buzzonaglia, red tuna in olive oil, entirely worked by hand and fished with a sustainable method. One of the treasures of the Sardinian Sea. A fine product, with a unique taste, versatile in the kitchen.
The buzzonaglia is the part of the red tuna fillet in contact with the central fishbone. It is characterized by a darker colour, with a more intense taste compared to the other parts of the tuna and it has an extraordinary softness to it.
Ideal as a base for the preparation of seasoning for pastas and rice, it goes perfectly well with dried tomatoes or with wild fennel, with capers, with taggiasche olives or chili peppers. It is also ideal as an appetizer or an aperitif together with white beans and Tropea onions.
