Circular and thin bread originated from Bonovra, in the Lugodoro territory. Su Zichi, here in the hard and already in bits version, is a precious companion in the kitchen, it is the main character of many dishes, capable of maintaining its consistence while cooked. Traditionally prepared with a scalding sheep’s broth or a broth with lardo and parsley, today the Zichi bread is accompanied with fish sauces, fresh tomatoes, mushrooms, artichokes and fish roe, eggplants and salted ricotta cheese, and Genovese pesto.
